Peruvian Ají de gallina

Peruvian gastronomy, one of the most recognized in the world for the diversity of flavors it offers to our palate. To have a great cultural diversity, Peru has had to reinvent itself in each historical event and part of the effects made possible the creation of dishes such as Ají de gallina.

"Menjar Blanc" was a sweet stew composed of blancmange, rice and chicken pieces, a dish of Spanish origin.

But when it arrived in Peru, it was separated into two different products, the blancmange, which gives its name to a reduction of milk and sugar, while the chicken and rice receive our fabulous aji amarillo (yellow chili).

Our Peruvian cooks gave it a 180° turn by adding aji amarillo, potatoes, nuts, onions, garlic and chicken, creating the aji de gallina we know today.
